Here is an incredibly easy recipe for you to make a moist, juicy, flavorful apple cake with fresh apples. My secret? I am using my waffle batter recipe.
You will simply need three apples ( I like to use Granny Smith), flour, sugar, milk, 2 eggs, a bit of vegetable oil, and cinnamon for a beautiful earthy flavor.
Apples are one of my favorite fruits to cook with besides plums and bananas. I love the freshness and slight tartness in an apple cake.

It only takes only 5 minutes to put the cake batter together, another 5 minutes to peel and roughly chop the apples, and a few more minutes to caramelize them in a frying pan.
I do like to add cinnamon to the apples for a more earthy flavor. If you don’t like cinnamon, simply leave it out.
Serve this delicious apple cake made with fresh apples with ice cream and whipped cream for a decadent quick dessert.

The springform pan I have been using has been in my family for a few generations now. It is not a nonstick pan so I do have to prepare the pan with parchment paper.
It is important to preheat the oven to 350 Degrees Fahrenheit/180 Degrees Celcius fanbake. So I recommend, to put on the oven before you start preparing the apples.

Easy Apple Cake With Fresh Apples
Equipment
- 1 small bowl
- Springform pan with removable bottom
Ingredients
For the apple mixture
- 3 apples (e.g.) Granny Smith
- 1 tsp ground cinnamon
- 1 tbsp sugar
- a knob of butter
The (waffle) batter
- 2 eggs
- 2 cups self-raising flour
- 2 cups milk
- 1 tsp vanilla essence
- 1/3 cup vegetable oil (I use sunflower oil)
- 2 tbsp sugar
- 1 tsp powdered sugar for dusting
Instructions
The apple mixture
- Peel, and cut the apples into rough pieces. Take the core out.
- Put the apple pieces into a small bowl.
- Add the cinnamon and sugar and mix well.
- Heat up the butter in a frying pan.
- Add the apples and let them caramelize for a few minutes. You don't want them to be too soft.
The waffle batter
- In the big bowl, whisk the eggs. Add the sugar and vanilla extract.
- Gradually add the milk and flour.
- Mix well.
- Lastly, add the vegetable oil.
Putting it together
- Add the softened apple pieces to the batter.
- Mix together.
- Line a springform pan with parchment paper.
- Fill in the cake batter.
- Bake in a preheated oven for around 45 minutes.
- Dust with powdered sugar and serve while still warm.
- Make it even more delicious with whipped cream and ice cream on the side.
