Today I am sharing a special recipe with you which is based on one of @annabellangbein's recipes who is a well-known celebrity here in New Zealand.
You will need mashed potatoes for this bread recipe which gives this focaccia-style bread a nice crust and chewy texture.
You can use leftover mashed potatoes or just make some beforehand.
It is such an easy recipe that will be a sure crowd-pleaser. Enjoy it on its own or with lasagna or some pumpkin soup.
You can use the dough also as a pizza base.

I am sure you will love this easy recipe for Crusty No Knead German bread rolls.
Mix the dough together on Saturday evening and bake the rolls fresh in the morning for a delicious German breakfast, with the star of it: das Sonntagsbroetchen.
If you make a big batch, you can easily freeze the baked rolls. 
Simply reheat them in the oven and they still taste like freshly baked German Sonntagsbroetchen.
Recipe:
2 cups spelt flour
2 cups bread flour
or
4 cups bread flour
2 tsp salt (I always use pink Himalayan salt)
1 tsp sugar
1/2 tsp dry yeast
mix the dry ingredients together, then mix 1/4 cup of vegetable oil with 1 1/2 cups of water and add to the dry ingredients.
! Depending on the flour, you may need to add a little bit more water. ! 
 I recommend gradually adding the water so the flour has time to absorb it. You don't want sloppy wet dough.
Cover the bowl with cling wrap and a clean towel and leave overnight on the benchtop.
Shape as shown in the video and bake in the preheated oven for 15 to 20 minutes at 230 Degrees Celcius/ 445 Degrees Fahrenheit.

Making sourdough bread is so rewarding and I do love the whole process that goes with it. 
In my video, I show you the exact steps from start to finish I am doing to achieve my beautiful, amazingly tasty, crusty sourdough bread. 

Here is the recipe:
½ cup active sourdough starter,
4 cups of bread flour
2tsp pink Himalayan salt or sea salt
1 ½ cups of filtered water (more or less depending on your flour)

First, mix the flour with the salt. Add the starter and mix in roughly. Gradually add the water until the flour has fully absorbed the water. Take your time, you don't want the dough to wet.
Cover with a tea towel and let it rest for 30 minutes. Then start your first stretch and fold. Do three more stretches and folds around every 30 minutes. Always cover the dough in between.
Once you finished, let the dough rest at room temperature for around 6 hours.
Take the dough out onto a floured work bench and preshape the dough into a round or oval shape. Let it rest for another 30 minutes. Now do the final shape to create more tension in the dough.
Place the dough with the seam side up into a banneton or a bowl covered with a tea towel. Make sure to sprinkle either the banneton or the tea towel with rice flour.
Put into the fridge overnight or even longer. It depends on when you want to make the bread. 
Preheat the oven to 445F with a baking vessel of your choice inside. I use a cast iron skillet and cover it with a stainless steel bowl.
Put the bread on parchment paper and score with a sharp knife or lame.
Place into your hot baking dish and cover with a lid or bowl.
Bake for 30 minutes, remove the bowl, and bake uncovered for another 15 to 20 minutes.
Let the sourdough bread cool down and ENJOY!!!

Planning (e.g. you want to bake the bread on Sunday):
Friday evening: take the sourdough starter out of the fridge and feed it with flour and water; cover with a clean cloth and leave it overnight on the benchtop.
Saturday morning: the starter should have bubbles which means it is active, proceed as outlined in the recipe
Sunday morning, afternoon, or evening: depending on what time suits you, bake your bread according to the recipe instructions

½ cup active sourdough starter,
4 cups of bread flour
2tsp pink Himalayan salt or sea salt
1 ½ cups of filtered water (more or less depending on your flour)

First, mix the flour with the salt. Add the starter and mix in roughly. Gradually add the water until the flour has fully absorbed the water. Take your time, you don't want the dough to wet.
Cover with a tea towel and let it rest for 30 minutes. Then start your first stretch and fold. Do three more stretches and folds around every 30 minutes. Always cover the dough in between.
Once you finished, let the dough rest at room temperature for around 6 hours.
Take the dough out onto a floured work bench and preshape the dough into a round or oval shape. Let it rest for another 30 minutes. Now do the final shape to create more tension in the dough.
Place the dough with the seam side up into a banneton or a bowl covered with a tea towel. Make sure to sprinkle either the banneton or the tea towel with rice flour.
Put into the fridge overnight or even longer. It depends on when you want to make the bread. 
Preheat the oven to 445F with a baking vessel of your choice inside. I use a cast iron skillet and cover it with a stainless steel bowl.
Put the bread on parchment paper and score with a sharp knife or lame.
Place into your hot baking dish and cover with a lid or bowl.
Bake for 30 minutes, remove the bowl, and bake uncovered for another 15 to 20 minutes.
Let the sourdough bread cool down and ENJOY!!!

Planning (e.g. you want to bake the bread on Sunday):
Friday evening: take the sourdough starter out of the fridge and feed it with flour and water; cover with a clean cloth and leave it overnight on the benchtop.
Saturday morning: the starter should have bubbles which means it is active, proceed as outlined in the recipe
Sunday morning, afternoon, or evening: depending on what time suits you, bake your bread according to the recipe instructions
