Buttermilk Waffles

makes 8 waffles

Ingredients

  • 2 cups self-raising flour
  • 2 tbsp sugar
  • 2 cups buttermilk
  • a pinch of salt
  • 2 eggs
  • 100 g melted butter
  • 1/2 teaspoon vanilla

Method

  1. Mix dry ingredients in a medium-sized bowl.
  2. Put the buttermilk, eggs, vanilla and melted butter into another bowl and whisk.
  3. Slowly pour the buttermilk mixture into the bowl with the dry ingredients and mix until just combined. The mixture will be a bit lumpy. Be careful not to overmix the batter.
  4. Let the batter rest for a while.
  5. In the meantime preheat the waffle maker and set your desired browning and setting number four for the buttermilk waffles.
  6. Pour the batter evenly on the waffle plates and close the lid.
  7. Wait for the audible alert and carefully remove the waffle.
  8. Tip: if the batter gets a bit too thick, just add a bit more buttermilk.

Serve the waffle with your favorite toppings. We love it with whipped cream, maple syrup, and fresh fruit. Delicious!
