Breakfast Eggs in a Hole
If you feel like eggs for breakfast, why not try these delicious breakfast eggs in a hole. It is a simple dish yet so scrumptious with thick slices of sourdough bread and free-range eggs. The perfect breakfast dish for Sundays, or actually for any day of the week.

- 2 slices bread
- 2 eggs (preferably free-range)
- vegetable oil
- some butter
- salt and pepper
Cut two thick slices of sourdough bread.
With a cookie-cutter cut out a hole in each of the slices
Heat up some oil and butter on medium heat in a large frying pan.
Once the oil/butter is hot, place the bread slices and the cutout bread into the pan.
Fry until golden brown on one side.
Flip them over, carefully crack the eggs and put one egg in each bread hole.
Season with salt and pepper.
Place on a lid so the eggs can cook through.
Check after a few minutes, if the egg white has set.
If not put the lid on again.
The eggs are cooked once the egg whites have set. It should take around 5 minutes. I do like the egg yolk runny. Just cook them to your liking.
Serve on a plate and garnish with some parsley or chives.
